In a disturbing new attempt at infiltration CANE TOADS were spotted trying to sneak into the launch of the PRIDE Festival 2006.

 

Luckily, Mother Abbess, pictured above, was able to capture them and they were dealt with by the very lovely and shy Sister Mary Jane of the Great Southern Land.

And is this where the CANE TOADS ended up?

FROGS LEGS a la Gravy Train (Lemon Grass and Coconut-Laced Curry).
serves 4.

This delicious lemon grass and coconut-laced curry comes from the convent kitchen and is a favourite of our Sister Mary Jane. We used to send the young Novices out, in the early morning mist to collect the frogs fresh from the convent stream, who brought them back to the kitchen where Sr Mary Jane, with gloves, would humanely stab them in the back, and then gut and skin them. Sr Mary Jane always took great pleasure in preparing the little green frogs for cooking. However, lately, the Novices have only been returning with those horrible poison spitting Cane Toads from Queensland which although increasing portion sizes, do not make very nice eating as they are highly toxic to humans. We now send the Novices to market for snap frozen frogs imported from China and Sr Mary Jane is in counselling. If you prefer a very hot curry, simply use more chilli peppers in this recipe.

Ingredients

4 Pairs of jumbo frog's legs -(about 1 pound), trimmed of excess fat.
1 Stalk fresh lemon grass, or 1 tablespoon dried lemon grass
2 Fresh red chilli peppers, seeded and sliced
2 Shallots, sliced.
2 Garlic cloves, crushed.
1 1/2 ts Sugar.
1 ts Curry paste.
2 ts Curry powder.
1/4 ts Salt, crushed.
2 tb Nuoc mam (Vietnamese fish sauce).
2 oz Cellophane (bean thread) noodles.
2 tb Vegetable oil.
1 Small onion, chopped.
1 c Chicken broth or water.
1/2 c Coconut milk or heavy cream.
1 ts Cornstarch
Freshly ground black pepper.
Coriander sprigs, for garnish

Method of Preparation:

Cut the frogs' legs into bite-size pieces. Rinse with cold water to remove any chipped bones. Pat dry and refrigerate.

If you are using fresh lemon grass, discard the outer leaves and upper half of the stalk. Cut into thin slices and finely chop. If you are using dried lemon grass, soak it in warm water for 1 hour. Drain and finely chop.

In a blender, combine the lemon grass with the chillis, shallots, garlic, sugar, curry paste, curry powder, salt and 1 tablespoon of the fish sauce. Process to a very fine paste. Rub the paste over the frogs' legs. Cover and refrigerate for 30 minutes.

Meanwhile, soak the cellophane noodles in warm water for 30 minutes. Drain. Cut into 2-inch sections.

Heat the oil in a saucepan over moderate heat. Add the onion and saute until translucent. Add the frogs' legs and brown well on all sides, about 3 minutes. Add the chicken broth and bring to a boil. Reduce the heat, cover and simmer for 15 minutes.

Uncover the pan and add the coconut milk, the cornstarch diluted in 1 tablespoon of cold water and the remaining 1 table- spoon fish sauce. Cook, stirring, until the sauce thickens, about 15 minutes.

Add the cellophane noodles and bring the mixture to the boil. Remove from the heat.

Sprinkle with black pepper and garnish with coriander sprigs.

Serve immediately with rice, over rice noodles with French bread.

Note: Instead of discarding the upper half of the lemon grass, crush it and cook it with the frogs' legs for extra flavor. Remove the stalk before serving.

Aims and Objectives of the OPI

Expiation of stigmatic guilt (that guilt we direct at ourselves or the guilt we apply to others.

Promulgation of Universal Joy, especially among GLBTIQ people.

To be a GLBTIQ Liberation Organisation.

To help make every GLBTIQ person feel good about themselves.

To provide a public forum to for like minded gay people and gay sympathetic people to express their views and interests.

To be concerned with the physical and social environment of all in the GLBTIQ community.

To be concerned with preserving and promoting the desirable historical, social and cultural features of the GLBTIQ community.

To review those activities and policies of public, statutory and private organisations which affect the GLBTIQ community.

To support and co-operate with other organizations whose aims and objectives are compatible with those of the Order.

To represent the views and interests of the members of the Order before public, statutory and private organisations on matters which affect the Order.

To raise funds for GLBTIQ charities and in particular those relating to HIV/AIDS.

To carry out safer sex education and raise awareness about the needs of HIV+ people within the GLBTIQ Community.

To do any other lawful acts as may be incidental or conducive to the the attainment of these objects and aims of the Order.
